Sparkling Melon Soup with Mint [Just 5 Ingredients, Video]

This frothy sparkling melon soup makes a classy palate cleanser and it's a great way to cool down. The magic of seasonal ingredients has no limits! Bonus: No cooking required, seriously.

I remember the first time I had this soup, my husband and I were celebrating our one year anniversary at a fancy restaurant up in Napa Valley we could barely afford. We were served this soup as a palette cleanser on the house, and it was sooo delicious. I had to ask the waiter for the recipe. He came back and to my surprise, it was just two ingredients. Melon and sparkling wine. I was stunned. This is such a great example of the magic of real, seasonal ingredients.

  • 1 - 4 pound melon, chilled 
  • 2 tablespoons of lime juice
  • 1 - 2 tablespoons of mint (or your favorite fresh herb), roughly chopped
  • ½ cup of chilled sparkling wine like Prosecco
  • Pinch of sea salt


Halve melon and scoop out seeds and discard. Continue scooping out the flesh with a large spoon into a medium size bowl.

Once complete, place in the container of a blender like a Vitamix, with lime juice and a couple pinches of pink Himalayan salt and blend until smooth.

Add roughly chopped mint and Prosecco or sparkling wine to the blender and pulse a few times to gently combine. Do not overmix or you will lose the bubbles from the champagne. Soup should be light and frothy. Once you’ve reached that consistency stop blending.

Serve in chilled glasses, garnish with a sprig of fresh mint. Serve immediately and enjoy!
