Plus, they’re great for bringing straight to the table for serving (but be warned, they’re heavy). One drawback to pure ceramic is that it’s susceptible to thermal shock, so it can crack if exposed to a sudden temperature change. And of course, it’s also more fragile than anything made with metal.
There aren’t too many options for fully ceramic cookware on the market, but I’ve tested and would recommend Xtrema cookware.

Ceramic-coated nonstick cookware is a more recent addition to the industry that’s rapidly becoming a favorite for home cooks. It was developed in direct response to growing consumer demand for nonstick options made without PFAS, and the cooking experience is very similar to that of a Teflon pan (just without the nasty toxins).

High heat and abrasive tools can quickly cause this coating to degrade, so it’s best not to exceed medium heat and avoid metal utensils and the dishwasher. Depending on the brand, ceramic-coated cookware may be oven-safe up to a certain temperature, but be sure to follow the manufacturer’s guidelines.
Unfortunately, even when you follow the rules for heat and utensils, ceramic-coated cookware simply doesn’t last as long as more durable options. It’s not built to last forever — but when used and cared for properly, ceramic-coated cookware can offer incredibly easy use and cleanup for anywhere from one to five years.

It’s worth noting that not all ceramic-coated cookware is made without PFAS, so be sure to read the label carefully! Beloved by professional chefs worldwide, stainless steel cookware can handle high-heat, high-stress environments with ease. It’s made from a blend of metals, including iron, chromium, and, occasionally, nickel. Fully stainless steel cookware is made without PFAS, silicone, or sol-gel, so it doesn’t have a nonstick finish (although this doesn’t mean you can’t achieve a nonstick experience).
You might also come across stainless clad cookware, which is made by sandwiching aluminum or copper between layers of stainless steel. This can improve heat conduction for faster, more even cooking. Ply refers to the number of layers of metal. Five-ply is generally more durable and better performing than three-ply, but it’s also more expensive.
Unlike cast iron cookware, stainless steel is non-reactive, meaning you can cook acidic ingredients like tomatoes and lemons without leaving behind a metallic flavor. It can be used with any kind of utensil without scratching, and many stainless steel pots and pans are dishwasher-safe.
Stainless steel is also better than ceramic for high-heat cooking, making it great for searing. It can go from the stovetop to the oven with ease and can even be used on a grill or over an open fire.
So are there any downsides? Well, because stainless steel doesn’t have a nonstick surface, it does require a little extra finesse. You’ll need to preheat the pan and use cooking fat to avoid a stuck-on mess.

In my kitchen, I reach for stainless steel cookware the most. However, certain dishes call for a nonstick pan. To extend the lifespan of your cookware, don’t exceed medium heat, use non-metal utensils, and skip the dishwasher.
