Sparkling, Cold, Melon Soup in Minutes [Just 5 Ingredients, Video]
This frothy sparkling, cold, melon soup is a great way to cool down. You can even pass it around at your next fancy dinner party as a palate cleanser, or starter. The best time to make this is during the hot summer months when melons are at their peak season for ripeness. BTW, you can even serve this as a fun cocktail. Bonus: No cooking required. Seriously.

I remember the first time I had this soup, my husband and I were celebrating our one year anniversary at a fancy restaurant up in Napa Valley we could barely afford. We were served this soup as a palette cleanser on the house, and it was sooo delicious. I had to ask the waiter for the recipe. He came back and to my surprise, it was just two ingredients. Melon and sparkling wine. I was stunned. This is such a great example of the magic of real, seasonal ingredients.

In this version, I added some mint and a squeeze of lime, but you could even skip that.

The key to this recipe is not over blending the soup with the sparkling wine of choice. If you over do it, you will remove the bubbles—and we want their frothy texture, so that would be unfortunate!

In the end you should halve a light, airy soup that your family and friends are going to love. This simple recipe is a winner with honeydew melon, cantaloupe, or another sweet melon. I’ve also enjoyed adding cucumber alongside the melon!

Kitchen Tools You’ll Need to Make Chilled Melon Soup
I’m a big believer in using the right kitchen tools for the right job. For this recipe, I recommend a strong blender like a Vitamix. When cutting large melons you want a sharp knife, so it doesn’t slip and you cut yourself. In the video, I’m using Made In’s Nakiri Knife. I like to have fun with kitchen serving tools and here I serve this soup in fun martini glasses.

Halve melon and scoop out seeds and discard. Continue scooping out the flesh with a large spoon into a medium size bowl.
Once complete, place in the container of a blender like a Vitamix, with lime juice and a couple pinches of pink Himalayan salt and blend until smooth.
Add roughly chopped mint and Prosecco or sparkling wine to the blender and pulse a few times to gently combine. Do not overmix or you will lose the bubbles from the sparkling wine. Soup should be light and frothy. Once you’ve reached that consistency stop blending.
Serve in chilled glasses (add ice if you want it ice cold), garnish with a sprig of fresh mint. Serve immediately and enjoy!
