This mango salad recipe is inspired by my love of finding ways to add fruit to savory dishes or summer soups (case in point: my melon soup with sparkling wine, watch the video!). If you need more protein or a healthy fat to make this feel like a meal, add avocado, sautéed or grilled chicken breast or thighs, or salmon. 

Simple Mango Salad Recipe That’s Packed With Flavor

This mango salad does require a lot of chopping of veg and herbs like cabbage, bell peppers, carrots, cilantro, and mint. If you want to simplify the chopping, use a food processor.

It’s best to make this salad in the summer when all of the ingredients are at their most fresh. That being said, these ingredients are available mostly everywhere year-round and will freshen up any meal! 

Simple Tips for Making the Mango Salad Vinaigrette

When it comes to this flavorful vinaigrette, here are my top tips to make it even easier.

Storage tip! I like to make it in a mason jar. Simply give the ingredients a shake before using. It’s also great for easy storage if you have any extra. 

Garlic tip! Use a microplane grater like this to grate the garlic into the dressing for a mellow garlic flavor. Depending on how you cut garlic, it changes the garlic flavor. If you simply chop the garlic, you may create a harsher garlic flavor. Using a garlic press and chopping garlic creates a harsher, spicer garlic flavor. However, if you smash the garlic clove first and then chop it or grate it using a grater, you create a mellower garlic flavor.

Batching tip! And if you want homemade salad dressing for the week, make a double batch. (You’ll want a double batch!)

Spicy Citrus Vinaigrette


Make the dressing: Zest and juice the lime and the orange, and put into a small to medium bowl or a jar (we are in love with these Weck Tulip and Cylindrical Jars). Using a microplane grater, grate the garlic clove into the jar or bowl. Add the remaining ingredients and whisk or shake until combined. Season to taste.

Make the salad: In a large bowl, toss the bell peppers, carrots, cabbage, cilantro, mint and green onions with the vinaigrette. Put the salad into a large serving bowl, and neatly lay the cut mango across the top of the salad. Sprinkle with chopped peanuts and serve.
