Vegan Chocolate Covered Strawberries with Coconut Whipped Cream Recipe

Strawberries are at their sweetest during spring and summer so now is a perfect time to whip these up. Ingredients
16 oz strawberries
1 cup dark chocolate chips
1 tablespoon coconut oil
5.4 oz coconut milk (BPA-free can or homemade)
1/4 cup organic powdered sugar
Directions
Refrigerate coconut milk and a large mixing bowl for at least 12 hours. Line a baking tray with parchment paper or a baking mat. Melt chocolate and oil in a double broiler. Stir constantly until smooth. Remove from heat.
Using tongs or two forks, dunk each strawberry in the chocolate. Swirling to make sure each strawberry is covered evenly. Place on the lined baking tray. Freeze for 15 minutes until chocolate has hardened. Transfer to refrigerator until ready to serve.
Separate the solid white layer at the top of the coconut milk from the liquid. A simple trick to do this is to open the can from the bottom and pour out the liquid so only the solid part remains. Add to the cooled mixing bowl, making sure not to get any of the liquid in the bowl. Then add the powdered sugar. Using a handheld mixer with whisk attachment, whisk coconut cream until light and fluffy.
Serve chocolate covered strawberries with coconut whipped cream on the side. Enjoy!
