Too hot to bake this summer? Yup, me too. But my craving for fresh fruits is stronger than ever. What’s a girl to do when she wants a sweet peach dessert but it’s over 100 degrees outside? Answer: You can take the baking out of a fruit crisp, but you can’t take the fruit crisp out of—um, well, never mind. The point is, you can cool down while indulging in the traditional “baked” dessert with our recipe for no-bake peach crisp. And best of all, it’s also totally vegan and raw. Now you’re super cool.

Ingredients

Peaches

7 ripe peaches, peeled, chopped

¼ cup honey, maple syrup, or agave

2 tablespoons fresh lemon juice

2 tablespoons olive oil

Topping

1 ½ cups walnuts or pecans

1 cup pitted dates

2 tablespoons olive oil

1 teaspoon vanilla extract

½ teaspoon ground cinnamon

Pinch sea salt

Method

1. Prepare the peaches: Combine all ingredients in a medium bowl; toss well. Arrange evenly on a baking dish; set aside.

2. Prepare the topping: Combine all ingredients in a food processor; pulse until crumbly but not completely smooth. Crumble topping over peach mixture. Serve immediately, chilled or gently warmed.
