Meatless Monday Recipe Roundup: Leafy Greens

A trip to the farmers market yesterday revealed one very clear fact: Dark leafy greens are in full effect. As summer lettuces disappear, they make way for the heartier, more nutritious, fibrous greens found in kale, chard, mustard greens and the like. Sometimes cooking with these suckers can be daunting, especially if you want those little ones to love ’em. This week, welcome a list of last week’s most delectable recipes from some of our favorite chef cum bloggers across the web. 

Can kale be fun? Sure, if you use it as a wrap! The folks over at The Taste Space reveal a unique recipe for Lime-Spiked Black Bean and Quinoa Kale Wraps. Fun to make, even more fun to eat. 

Another kale wrap we love came from Scandi Foodie. These Kale Rolls with Quinoa and Chickpea Stuffing take their cue from dolmas, but are a world of their own, like biting into a savory surprise.

An exciting way to make greens palpable to the young and old alike is within the confines of an insanely healthy smoothie, that also happens to be super tasty.
